Chocolate Truffle Balls

The recipe is really simple.... i used a remainder baked choc cake which was soft n crumbly. I crumbled it even more, added some butter on my hands as i kneaded the cake into a ball.

You can add broken wafer pieces, nuts, choc chip into the ball and knead it together. For me, it was like making ghee balls for Diwali.

I roll it into balls and leave in fridge for a while. Then take it out, dip it into some melted chocolate and leave to dry. Once set, put into paper cups :)

You can alternatively, roll it over some chocolate rice and hundreds and thousand AFTER the chocolate dip. Me, I prefer the chocolate version - plain and yummy.

Absolutely Chewy Fudgy Brownies

I love brownies, especially this one, which is my mom's recipe. I dont have the ingredients in kg/grammes so you have to convert from ounces. I used to bake this for school canteen day,but it never got to leave the classroom, always sold out!

Vege Pizza

Just make a thick vegetable curry, with cauliflower, carrot, mushrooms, broccoli and potatoes cook until its almost dry.

Vegetable Curry:
1 cup broccoli (florets)
2 cups cauliflower (florets)
1 cup carrot cut into fours (shaped like triangles)
1/2 cup potatoes (diced)
1 can mushroom (sliced thickly)

Cook onions and garlic (diced) in oil, when almost done, add 2 tbspn meat curry powder and 1/2 tbspn chilli powder, cook until it oil starts leaving the mix, add vegetable and add some water. Cook until almost dry.

Put over a pre-made pizza dough, topped with onion rings, cheese (can use slices, if lazy) and pineapples and anything else you want to garnish on pizza.

Bake for 25mins :)

Quick Mix Rich So-Soft-You-Can-Cut-It-With-A-Butter-Knife Chocolate Cake

Top pic is my terrible attempt at cake decorating!

I love baking cakes where everything goes into ONE big bowl - whisked/mixed, stirred and its ready for baking!

185gms butter

vanilla essence

1 3/4 cup sugar

3 eggs

2 cups SRF

2/3 cup cocoa

1 cup water

Put all the ingredients in a bowl, beat on low speed until it combines and then increase speed until texture is smooth and changes colour. (Well mine didnt change much colour, but it was silky smooth, almost like rich moussy-shake!)

According to recipe, bake for 1 1/2 hours in moderate oven, but i am setting it to 50 mins on moderate oven.... and the best part of making this cake, both my kids helped.

My 34 month old (that is 2 yrs 10 month old) daughter held the electric mixer steadily - with supervision of course, while my 16 month old son (1 1/2 yr old) ahemz supervised the mixing he peered into the bowl to make sure it was smooth and consistent :P

As a reward, she got the spoon once i was done and he, well didnt like the batter too much. Oh well.

Note: thats my daughter's finger inching her way to the cake... took her all her might and willpower not to eat the cake immediately!

Banana Nut Cake

I only make banana cakes if i have overripe bananas and there isnt enough mouth to finish it! Bananas are tasty on their own ... and great for kids! So, here's the banana nut cake recipe for mushy bananas

125gms butter
vanilla essence
3/4 cup castor sugar
2 eggs
1 cup mashed banana (apprax bout 3-4 bananas)
3/4 cup SRF
3/4 cup plain flour
1/2 tspn bicarb soda
1/2 cup walnuts or almonds (i like almonds)

Cream butter, sugar, essence until light n fluffy. Then add eggs one at the time into the mixer, take out, stir in flour n bicarb, add banana n nuts and fold.

Bake for 40-45mins in moderate oven, tra-la!!!! one banana nut cake!

I made my own honey glaze (glamourous  name for honey icing) by adding sifted icing sugar to 30gms butter, stir in and add 1 tbpsn honey. mix well and slather over cake - yummy!

Easy Mix Carrot Cake

This must be the easiest cake I've ever made - if the blender didnt act up on me!

1/2 tspn cinnamon ground

2 medium carrots roughly chopped

185gms butter - soft

3/4 cup brown sugar

1 cup wholemeal SRF (i used normal SRF)

1 cup sultanas ( can use nuts instead - perhaps next time)

Put carrots, cinnamon n eggs n soda in blender or processor, until carots finely blended, add butter n sugar. take out stir in flour n sultanas, bake for 50mins oven 160-170C. yummy carrot cake!

Orange Yogurt Cake

Another delicious orange cake, especially if you have loads of yogurt at home!

125gm butter

1 tbspn orange rind

1 cup sugar

3 eggs separated

2 cups SRF

1/4 cup orange juice

1 cup yogurt

Cream butter, rind n sugar until fluffy, beat in egg yold one at the time, stir in in portions the flour and orange juice n yogurt until mixes well. Whisk egg white until soft peaks form, stir into mix in batches and bake for 2 hours! But, i baked for 50mins in 140C, until sides came out. Use same icing as above post... its soooo soft!

Orange Chocolate Marble Cake

I love baking this orange-chocolate marble cake - its a sure winner all the time!

If you want plain orange cake or plain chocolate, just omit the orange OR choc part n double the remainder part:

50g chopped dark choc/ i use 1 big Tbspn cocoa instead

125gm butter

vanilla essence

1 1/3 cup castor sugar

2 eggs

2cups SR flour

3/4 cup milk

1 tbspn grated orange rind

Combine butter n sugar, beat, add essence and then add egg. Stir in flour n milk in 2 batches, and then divide into 2 mix. One mix u add cocoa powder n stir it up, another batch add the orange rind n mix well. Spoon the mixture into the already buttered - and floured pan, so it will look like marble cake.

Bake 150degrees C for 35 mins, until knife comes out clean.
U can make orange icing using 30gms butter, 1-1.5 cups icing sugar (depends on howmuch icing u want) and 2 tbspn orange juice) i also add bit of rind in it - looks nice. stir in well, n slather on.

Mmmmmm Mmmmm Brownies

I love  brownies, the  chewy kind especially! These brownies are fine, but undercook them for the chewy bit.

1/2 cup vegetable oil ( i use butter)
1 cup white sugar
1 teaspoon vanilla extract
2 eggs
1/2 cup plain flour
1/3 cup cocoa powder
1/4 teaspoon baking powder
1/4 teaspoon salt
1/2 cup chopped walnuts (optional)

1/2 cup choc bits (adds to the chewy sticky bit of the brownies)

Mix together the oil, sugar, and vanilla. Beat in eggs. Combine flour, cocoa, baking powder, and salt, stir into the egg mixture until well blended. Stir in walnuts, choc chips (if desired).
Bake for 15to 20 minutes, or until the brownie begins to pull away from edges of pan. Or the knife comes out sticky  a little from the brownie!

Yummylicious!

I hate baking apple pies, because I am not a fan of the pastry crust that comes with it. So, what does one do when you have apples filling up your fruit bowl? You bake!
